The first creation of my afternoon was some yummy fruit and nut balls made with almond,brazil and cashew spread and spelt syrup.
After trying the fruit and nut balls we decided that it was time for dinner. So along came a totally yummy and fresh chicken, ginger and garlic stir fry with jasmine rice. There is nothing better than simple flavours mixed with fresh vegetables and the wholesome flavour of steamed rice. It really hit the spot:
After dinner we enjoyed a nice glass of wine together, and then for some odd reason I decided that it was a great idea to go to the supermarket at 9pm on a Friday night. I wanted to get some bananas for pancakes in the morning, and whilst I was there I grabbed the ingredients for gluten free sticky date pudding. Naughty but nice, oh so nice :) We totally enjoyed it, especially with a good lashing of cream (the recipe is actually dairy free, so if you need to have it dairy free its definitely an option). The puddings were made in cupcake pans, so we have plenty left over which i'll pop in the freezer for a quick dessert any time. Left overs are lots of fun!
