Avocado Coconut Chocolate Mousse.
In a word, Yum!
I've adapted the recipe from Sarah Wilsons I Quit Sugar Cookbook. It is dairy, wheat, nut and sugar free.
2 ripe avocados
1/4 cup of whole cocoa powder
230ml can of chilled coconut cream
1 tablespoon of chia seeds
2 tablespoons of rice syrup
1 tablespoon of maple syrup
sprinkle of cinnamon
1 tsp vanilla extract
pinch of sea salt
Just assemble everything that you need, as above.
Then you dump it into your blender or food processor and whizz it up. It will be a bit lumpy for a a minute or so. Keep blending until you have a nice smooth creamy consistency.
Once you have the right consistency, fill up some little teacups or ramekin dishes, and chill the mousse in the fridge for a couple of hours.
Now all that's left to do is get a spoon, some good company, and enjoy :)
