The reason I was chopping onions was to make red bean burgers. I am a first timer at these, and they were quite yummy. We had them in sour dough burger rolls with salad, hommus, avocado and tomato chutney. I think there was a little bit too much salad for Bren, but he warmed up to it, and I really enjoyed it too ;) They would be good in burritos instead of mince meat mix too, we might have to try that soon perhaps with some cheese, mmmm cheese!

1 cup red kidney beans
1 cup sunflower seeds
1/2 cup carrot, grated
1/2 cup red onion - finely chopped (sore eyes culprit)
1/2 cup green capsicum - finely chopped
1 tbs fresh parsley - finely chopped - (see mister parsley man above, the newest addition to our kitchen)
1 tbs fresh basil - finely chopped
sea salt and ground black pepper to taste
2 tbs macadamia oil
The next step is to take your cup of sunflower seeds, and grind them until they are the consistency of almond meal or flour. I used a coffee grinder, and it worked a treat, producing a nice mealy bowl of sunflower seeds, see below!
The recipe makes 10 small patties, or 6 to 8 bigger ones depending on what you like.
Heat the macadamia oil in a fry pan on low to medium heat, and then cook the patties for 10 minutes on each side. They do actually need a full 20 minutes surprisingly.
The end result was worth the slimy mess :)
