I can hear you all going ewwww already :) But guess what? I was so pleasantly surprised by the fresh vibrant taste of Mr.Parsley in this power smoothie, and I think you will be too. Honestly I thought it was going to be vile and disgusting, but I actually enjoy it quite a lot! The smoothie has a very fresh, invigorating, slightly sweet taste to it. That might have something to do with the maple syrup I added, but it worked a treat!
½ cup almond milk
½ cup coconut milk
1 tbs chia seeds
1 cup packed parsley
Dash of maple syrup
2 large strawberries
Handful of blueberries
1 tsp acai berry powder
1 frozen ice block of fresh squeezed lemon juice = about 2 tsp fresh
Make sure you blend all the ingredients really well. Approximately 30 seconds, and serve with some ice cubes. Slurp and enjoy, mmmmm.
This is my new favourite way to have acai berry powder. I made this smoothie 2 days in a row last week, and I honestly had so much more energy, on the second day in particularly. I'm attributing that more to the fresh parsley full of iron and antioxidants rather than the acai, but i'm all for the synergistic effect too. It was definately noticeable to me the next day when I didn't have this little super food smoothie, and that is the power of fresh wholesome food!
