Brendan and I have just moved into a beautiful new home, and have spent the past month packing, cleaning our old and new homes, unpacking and furniture shopping. It's been a lot of work, and we are down to the fun end now :) I've also had an unexpected health issue pop up, but I'm all set on the right track back to health now. Our health really is one of the most important things when it comes to quality of life.
Todays Recipe is a delicious, simple Weekend Breakfast.
- 1 cup spelt flour
- 1 cup milk (bonsoy, oat, rice, dairy – whatever milk you like)
- 1 tsp aluminium free baking powder
- Coconut flakes
- rolled oats
- cinnamon, nutmeg, ground ginger
- vanilla essence
Personally in ours I like to add coconut flakes, cinnamon and vanilla essence. If you enjoy simple, you don't have to add anything!
Cook the pancakes in a pre heated fry pan, with a dollop of coconut oil. Put more coconut oil in the pan for each pancake. They will take a little longer to cook than traditional pancakes, and may not bubble as much.
For the topping:
- 1 cup frozen berries
- A dash of maple syrup or coconut syrup
We love to have this as a Saturday or Sunday morning breakfast, and the beauty is you can really change it up with whatever toppings and flavours you enjoy J They are great with pan fried banana slices, nut butter and coconut sprinkles, and of course good old maple syrup on top.
