It's the most important meal of the day, yet so many of us feel that we don't have enough time in the morning to make it a nutritious and nourishing part of our routine. Hello there :) It's been a little while since I've posted on Wholesome Chick, and I'm really happy to be back! Today I've got an update, and a delicious easy recipe to share with you all.
Brendan and I have just moved into a beautiful new home, and have spent the past month packing, cleaning our old and new homes, unpacking and furniture shopping. It's been a lot of work, and we are down to the fun end now :) I've also had an unexpected health issue pop up, but I'm all set on the right track back to health now. Our health really is one of the most important things when it comes to quality of life.
Todays Recipe is a delicious, simple Weekend Breakfast.
This recipe is incredibly simple to make, tasty and nutritious. A perfect breakfast, especially if you're time poor in the mornings. I made it using ingredients that were already in my pantry. Once assembled, keep it stored in an air tight container in your pantry.
2 cups puffed amaranth
2 cups puffed buckwheat
2 cups puffed spelt
1 cup of oat bran
1 cup rolled oats
1 cup rice bran straws
1 cup of roasted buckwheat groats
1 cup of linseeds
1 cup of sunflower seeds
1/2 cup dried cranberries
3 tablespoons of coconut sugar
3 teaspoons of cinnamon
Mix all the ingredients together thoroughly. Serve with milk of your choice and fresh berries or banana for a delicious breakfast.
The beauty of this kind of muesli is that you can put in any ingredients you fancy - almonds, walnuts, dried prunes etc. There is no cooking, no fuss, and its one container so there's also no mess.

Yes we have met him on here before, but today we are seeing him in a different light all together! That is in a smoothie!!
I can hear you all going ewwww already :) But guess what? I was so pleasantly surprised by the fresh vibrant taste of Mr.Parsley in this power smoothie, and I think you will be too. Honestly I thought it was going to be vile and disgusting, but I actually enjoy it quite a lot! The smoothie has a very fresh, invigorating, slightly sweet taste to it. That might have something to do with the maple syrup I added, but it worked a treat!
½ cup almond milk
½ cup coconut milk
1 tbs chia seeds
1 cup packed parsley
Dash of maple syrup
2 large strawberries
Handful of blueberries
1 tsp acai berry powder
1 frozen ice block of fresh squeezed lemon juice = about 2 tsp fresh
Make sure you blend all the ingredients really well. Approximately 30 seconds, and serve with some ice cubes. Slurp and enjoy, mmmmm.
This is my new favourite way to have acai berry powder. I made this smoothie 2 days in a row last week, and I honestly had so much more energy, on the second day in particularly. I'm attributing that more to the fresh parsley full of iron and antioxidants rather than the acai, but i'm all for the synergistic effect too. It was definately noticeable to me the next day when I didn't have this little super food smoothie, and that is the power of fresh wholesome food!
