Fi and I very recently started our 365 Days of Gratefulness project which coincides with Spring and our new beginnings, you can check it out under the '365 Days of Gratefulness' tab at the top of this page. It's been really exciting because it's brought with it a change of perspective and an awareness of all the little things that I appreciate in life. Let's see where this project takes us :) I'm really excited to share the journey with you, and would love to hear about your own journeys of self reflection and appreciation.
I have to say that one thing that makes me happy always, is food :) It's such a community and family thing for me, the best part of it is sharing what you have made with family and friends. And all those textures and flavours floating around in your mouth, who wouldn't be happy! It's really exciting to think about all the different possibilities and ways of cooking food, mmm getting hungry just writing about this.
Here is just one of those ways ;)
First step- totally smother the base with tomato paste, as above!
Second step- go nuts with the rocket. I used about 50gm of rocket, it wilts down a lot and its delicious.
Third step - add whatever toppings you like to make a fresh, yummy, scrumptious dinner. With this one I used lots of crumbed feta, whole pitted olives, proscuitto, fresh capsicum and fresh red onion. I Baked it at 180'C for 15 mins, and in the last 5 minutes of cooking I added a sprinkle of mozzarella to get that stringy cheese feel that just makes a pizza 'feel' yum! It was good, really good. Bren and I are going out for Italian tonight, not sure if we can top it! Hehe.
You know how I have a slight obsession with the website 'Oh She Glows', well last night was a cooking night, and I made a recipe from OSG website. Just wait til you see these babies. Brendan and I died with joy when these little delights popped into our mouths.
